Recipe of The Month from Olayemi Adelekan

Olayemi Adelekan at ‘Yummy By Design’ is a passionate foodie and MasterChef UK 2022 (Top 6) Semi Finalist who has been cooking for over 40 years. We are delighted to have her back performing in our cookery theatre again in April.

This month she shares a delicious recipe with us of Beetroot, Carrot & Caramelised Red Onion Tart.

Beetroot, Carrot & Caramelised Red Onion Tart

This is a relatively easy tart that comes together quickly. You can dice the beetroot into brunoise or simply grate. Use home made or shop bought tart cases. Fill just before serving

Ingredients

250g of Beetroot

100g of Carrot

150g of red onions

1 Tbs of Louisa’s Citrus honey

1 ½ Tbs of Aged Balsamic Vinegar

2 Tbs of Oil

Smoked sea salt to taste

Pinch of Black Pepper

Method

  1. Slice the red onions
  2. Add 1 Tbs of oil to a non-stick pan and place over medium heat. Add the onions with a pinch of salt and cook gently until caramelised; remove from pan and set aside
  3. Peel and grate the beetroot and carrot
  4. Add 1Tbs of oil to a pan and gently cook the beetroot and carrot until cooked. Season with salt and black pepper
  5. Add the caramelised onion, honey and balsamic vinegar. Cook for another 1 – 2 minutes. Remove from heat and set aside
  6. Fill a tart shell and top with whipped cream cheese and goats cheese seasoned with salt and pepper
  7. Finish with a drizzle of citrus honey and garnish with some fresh flowers and micro herbs
